Cabernet Sauvignon January 02, 2015
2006 Willow Creek Aquitania Cabernet Sauvignon
Wine Rating

94
An impressive wine, 22 months in new French oak, wild yeast ferment, bottled without fining and filtration. A minimal intervention wine that showcases quality fruit and oak.

A mature red in colour, the nose has initial rich vanillin oak contrasted by tobacco, cassis, a touch of tomato leaf and menthol.

The palate has the backing of savoury oak, blackcurrant frames the palate, the tannins are all leather and earth giving superb mouth feel. Savoury and drying black fruits to finish, this wine will continue to evolve over the shorter term.
