Review Detail

1999 Domaine Daniel-Etienne Defaix Chablis 1er Cru Vaillon
Wine Rating

93
A golden yellow in colour, a mature nose with plenty of life left in it, biscuity with butterscotch and a broad brush of stone fruits.

The palate is mature, but still maintaining a mineral purity that is the hallmark of Chablis. The acidity is centred on green apple and restrained lemon pith with a fine and powdery finish that accentuates the wines length and gives superb texture. In terms of fruit nectarine is pitted alongside caramelised peach skins.

Drinking well now and will hold for another 4 - 5 years with ease.
