2016 Passing Clouds The Angel Cabernet Sauvignon

the Angel' represents the best barrels of Cabernet Sauvignon produced by Passing Clouds from the Serpentine vineyard in the Bendigo wine region. A third oft the wine went through extended post ferment maceration on skins for 50 days. The wine was aged in French oak for 16 months, 25% of which were new.

A nose of blackberry and mulberry fruit with cedar and flashes of graphite. A tightly bound wine at this point in its development with flowing acidity and compact tannins that give a textural counterpoint to brooding dark berry fruits. Oak provides an embellishment of spice alongside primary red and black berry fruits on the mid palate. There is is subtle savoury note from the post ferment maceration that adds significant interest to finish.

This is undoubtedly a wine that a will reward medium term cellaring.
