This is a wine that needs to be tried to appreciate the technique and quality of fruit that has gone into it. The wine itself was fermented whole bunch in two 500L barrels, it was then left on skins for 60 days allowing it to complete fermentation and malo. The wine was then pressed back into one of the 500 L barrels. The wine was bottled with no fining or filtration.
To start with, this wine is a triumph of the difficult 2011 vintage. The wine has a nose that gives smoke, ripe stem and stakly cherry fruit. The palate is laden with genrous spice amongst elegant red cherry fruits. The tannins are framing and in perfect balance with a concoffiny of brown spices, earthern understones and red berry fruits to finish.
A tasting experience that is enjoyed even further when you understand how the wine was made.
