This wine shows some adept and adventurous winemaking with 15% whole bunch, wild yeast ferment and extended post ferment maceration prior to pressing. The result is a wine that has a savoury complexity of plum and dark cherry on the nose.
The wine is medium bodied and has impeccable structure, the tannins accentuate the peppery and spicy aspects to the dark fruits, with French vanillin oak giving elegance and framing the savoury finish.
