The fruit for this wine was sourced from Heathcote, and it is a beautiful expression of the sometimes maligned Aussie icon, Sparkling Shiraz.
The bead is impeccably fine and evaporates in the mouth as only a great method champenoise wine can. The nose has layers of complexity with dark plum enjoying the trapping of spearmint and dark chocolate. The interplay between bubbles, tannin and acid is superb on the palate with the texture well supported by plum, gentle spice and undergrowth.
Will last a long time.
