A wine produced in minute proportions, with less than 3000 bottles made. Grapes are sourced from the Pyrenees region and made with a small proportion of co-fermented Viognier, inclusion of 25% whole bunches and partial wild yeast fermentation. The resultant wine has elegance and structure that is the hallmark of the Pyrenees, the inclusion of Viognier gives a floral lift to plum and sweeter blueberry on the nose, the palate is built around a dense core of dark fruits with oak induced spice and fine tannins with undertones of cocoa and pepper. The finish is long, with flashes of spice and lingering dark fruits.
