Wine Rating

Some interesting winemaking went into this wine, 1/3 of the grapes were cold soaked for 3 days on skins prior to fermentation, with the other 2/3 whole bunch pressed with the inclusion of stems from the 1/3 that was cold soaked. The wine was aged in a mixture of stainless steel and oak, with a small inclusion of new oak and six months spent on lees. It may sound confusing but it results in a wine with plenty of textural complexity and flavours.
A light yellow with a fleck of green in the glass, then nose is an attractive mix of honeyed peach, straw and clotted cream.
The wine gives a generous and full expression of white peach and apricot that is paired back by textural acidity and gentle wood spice on the mid palate, there is a lemon / lime character that gives contrast to the honeyed, almost creamy stone fruits to finish.
Anything but a simple white wine.
