Xavier Bizot is in the upper echelon of producers of Sauvignon Blanc in Australia with the wine showing a fair nod to Xavier’s homeland of France when it comes to both winemaking technique and the complex, interesting wine that results. The wine is produced from the close planted Crayeres Vineyard, juice was a cold settled for two months prior to fermentation in old French oak demi-muids after which it was aged on gross lees for 9 months. A little over 2000 bottles produced and worth tracking down.

The nose has a heady mix of aromatics that has white grapefruit, lanolin and faint citrus notes that are pulled together with a gentle creaminess afforded by time on lees. The grapefruit like texture pulls through on the palate with a build of citrus. The finish has a savoury flare but bright acidity that gives both length and interest.
