This is such an interesting wine, fermented on skins and off dry; it is anything but the usual expression of Hunter Semillon.
Light yellow with green hues, the nose has a creaminess to honeyed lemon and lanolin. The palate tricks you, you start by thinking the style is dry with slate, lemon and some slight floral tones before there is a gentle, integrated build of sweeter tropical notes from the residual sugar. Things are brought into laser focus to finish with chalky citrus acidity stealing the show.
