This is not your usual Semillon. Wild yeast fermentation on skins, with some residual sugar giving an off dry finish. It’s some crafty winemaking and does well with the variety given it’s citrus dominant characters and propensity to hold it’s acid well. It will be fascinating to see how it ages given Semillon is known for the dramatic change of character with time.

A light yellow in colour, which is more developed than a typical new release which speaks to the time on skins, the nose has understated peach with a faint touch of musk and red apple.

The palate is an experience in texture, there is a plushness and breadth of citrus fruit that’s accentuated by residual sugar before being cut through by a swathe of acidity with a green apple edge. The finish enjoys a touch of jasmine.

A great wine to match with spicy, highly aromatic food.
