Review Detail
2018 Indomitus Albus
Wine Rating
94
This is Hunter Valley Semillon that throws the traditional winemaking techniques out the window, the wine was wild fermented with 30% left on skins and 30% in oak before being matured on skins for 195 days… compare that to being bottled after a few months !
The aromatics are more stone fruits and apple than citrus with an underlying orange zest note that mixes with clotted cream. The palate is rounded and generously textured, specifically the acid profile just melts away yet the wine remains vibrant. The dominant fruit character on the palate is granny smith apple, but it is in no way tart. The finish sees the first note of citrus coming through with a lemony aspect that finishes the wine well.
If you wanted a typical Hunter Sem… keep walking. If you want a really interesting drink you have found it.
