2006 Ashton Hills Sparkling Shiraz

The grapes for this wine came from the Wendouree vineyard in the Clare Valley. The wine was matured in large format oak for four years prior to being bottled and matured on lees for a further 2 years.

The resultant wine is complex and mature with savoury wild strawberry and cherry on the nose with some woody / lees derived funk.

There is some initial primary fruit on entry, before the wine moves to a much more savoury mode of old leather, briny olive, dusty blackberry and plum fruit. The wine has good length and in it’s drinking window now.
