This wine has the luxury of being aged on lees in bottle for four years prior to being disgorged, at $35 it’s an absolute bargain given the care, time and technique that as gone into it.

A golden yellow in colour, the nose has clotted cream with white peach and brioche notes that are backed by citrus fruits.

A full and complex sparkling that highlights the natural acidity of Macedon Ranges that was enhanced by the coolness of the 2011 vintage. Even though acidity is there it is met in equal measure by a richness of stone fruits that are integrated with a leesy creaminess and subtle funk that only comes from time in bottle. Acidity is precise and keeps the wines richer notes In check to finish.
