he wine is a blend of 88% Pinot Noir, 8% Chardonnay and 4% Pinot Meunier. The grapes were picked in March and aged in old oak for 8 months prior to Tirage, with the wine on lees for 18 months prior to disgorgement.
A pretty pink to copper hue, with a fine persistent bead and aromatics that are floral and laced with wild strawberry and red apple alongside some creamier top notes.
The palate is quite stunning, there is an elegance and understated generosity that is not often achieved with Australian sparkling rose; the red berry fruits are precise and cherry focused but get caught up in a gentle creaminess of stone fruit and lees induced complexity. The finish has flashes of citrus to red berries. An exceptional wine.
